10 pounder

My baby girl is 2 months old. I keep waiting for things to be difficult with her. But this is a completely different experience than with Grey. It has been nice to enjoy the newborn stage. Grey screamed for 6 months, so this has been a very pleasant change.

She is just starting to smile and it melts my heart. She loves her big brother and will sit and stare at him while he sings ABC's to her or puts cars in her hands. Yesterday during her shots he held her hand and said, "shhhh..." to calm her down. They are going to have such a sweet relationship (until the sharing problem begins). The doctor said she is "thriving" and catching up from her tiny start. YAY!

Labor Day


I'm a little bit behind here on this post... Time is going very quickly and I'm not getting much done besides taking care of kids! We spent a nice, long weekend up in Dillon for Labor Day. It was so great to be together as a family and relax. I got through three books while we were there. Fabulous (and rare)!

First day we went to the Dillon Farmer's Market and tested food at almost every booth. Best purchases were Primo Raspberry Habanero jam (repeat customers) and White Girl Salsa. Grey tried everything we did. It was pretty cute.

The next day we went to the Taste of Keystone for even more food! Jared took Grey out on a pedal boat to feed the fish and ducks. As you can tell, he loved his first boat ride.

We took advantage of long walks, taking Grey to the playground and driving to Hoosier Pass. I am ready to go back.

Mmmm Bread

Honey Whole Wheat Bread


I have been making our bread for a little while now but it took me some time (and some semi-disgusting loafs of bread) to find the right combination. I tweaked a couple of recipes to come up with this one. I wanted something that was fairly easy with few ingredients. I was also looking for bread that worked well as sandwiches as well as just eating plain. Plus at the time I started I only had a kitchenaid mixer and most recipes were too large for it. Getting a Bosch mixer has rocked my world! I love it!!!

Ingredients:
1/3 cup canola oil
1/3 cup honey
1 tablespoon salt
2 1/2 cups hot water
1/4 cup wheat gluten
1/4-1/2 cup ground flax seed
1 tablespoon yeast
approx. 6 cups whole wheat flour (I grind mine fresh using hard white wheat)

Directions:
Mix oil, honey, salt and hot water. Add wheat gluten, flax seed and 1 1/2 cups flour. Mix well to let the wheat gluten develop (approx. 2 minutes). Add yeast and mix. Add 2 cups flour and mix well (approx. 4-5 minutes).

Make sure to be using the dough hook on the mixer at this point. Slowly add the rest of the flour in 1/4-1/2 cup increments (approx. 2 cups) mixing well in between until the dough pulls cleanly away from sides of the bowl. Using the dough hook, knead bread for about 5-8 minutes.

Place in a greased bowl, cover with damp towel and let rise for one hour.

Punch down and form into 2 loaves. Place in 2 large greased bread pans. Cover with a damp towel and let rise for 1 - 1 1/2 hours.

Bake at 350 for about 35 minutes. Let cool on wire rack for 10 minutes before removing from pan.

Grey got to go to his first Rockies game. We loaded him up with nachos, a hot dog, and peanuts. Isn't that what baseball games are all about?

1 month (and 2 days)

I meant to take pictures and get them up on Elise's ONE-month birthday, but things take longer with kids! Last week it took me two days to get our grocery shopping done. Whew! She is a sweet little baby and we adore her. She is plumping up very nicely!
