Honey Whole Wheat Bread

I have been making our bread for a little while now but it took me some time (and some semi-disgusting loafs of bread) to find the right combination. I tweaked a couple of recipes to come up with this one. I wanted something that was fairly easy with few ingredients. I was also looking for bread that worked well as sandwiches as well as just eating plain. Plus at the time I started I only had a kitchenaid mixer and most recipes were too large for it. Getting a Bosch mixer has rocked my world! I love it!!!

1/3 cup canola oil
1/3 cup honey
1 tablespoon salt
2 1/2 cups hot water
1/4 cup wheat gluten
1/4-1/2 cup ground flax seed
1 tablespoon yeast
approx. 6 cups whole wheat flour (I grind mine fresh using hard white wheat)

Mix oil, honey, salt and hot water. Add wheat gluten, flax seed and 1 1/2 cups flour. Mix well to let the wheat gluten develop (approx. 2 minutes). Add yeast and mix. Add 2 cups flour and mix well (approx. 4-5 minutes).

Make sure to be using the dough hook on the mixer at this point. Slowly add the rest of the flour in 1/4-1/2 cup increments (approx. 2 cups) mixing well in between until the dough pulls cleanly away from sides of the bowl. Using the dough hook, knead bread for about 5-8 minutes.

Place in a greased bowl, cover with damp towel and let rise for one hour.

Punch down and form into 2 loaves. Place in 2 large greased bread pans. Cover with a damp towel and let rise for 1 - 1 1/2 hours.

Bake at 350 for about 35 minutes. Let cool on wire rack for 10 minutes before removing from pan.

There is nothing better than hot, fresh bread with raspberry freezer jam.

Bosch is the best. I have been obsessed with it for a little over a year. I have not bought a loaf of bread from the store in that time either. I make it every other week and freeze it and that's all we use for sandwhiches, etc. Let me know if you ever want to try another recipe because the one I have is super yummy and soft too. Great post! Hope you guys are doing well!
